Datil Bee Awesome Sweet Hot Honey

A taste of honey, with a sense of adventure.

We wanted to create a culinary sensation that would put a smile on your tongue. It needed to be savory and leave you with a unique new experience.

 

It began with an interest in chile-infused honey. But after months, and dozens of renditions of it at our Pizzeria, we still wanted something a little different. Then, while visiting some foodie friends in Florida, Rob "The Food Guy" Phillip discovered the perfect pepper – the Yellow Lantern.

Its official moniker is the Datil pepper. 

 

Some say it is native to the island of Minorca and was brought to the mainland by indentured workers. Others swear it found its way from Cuba around 1880 by way of a jelly maker named S. B. Valls. Whatever, this small, hot pepper is now local to St. Augustine, FL, and adds the right kick to our honey.

Hitting a Scoville unit of around 100,000 to 300,000 – the scale used to measure the spiciness of peppers - a Datil is compared to a habanero in pop.  But this fiery yellow prize also possesses a sweet fruity tang that makes our honey a condiment to be enjoyed on pizza, drinks, cocktails, BBQ, seafood, chicken, biscuits, cheese, dressings, marinades, jams, jellies...and even on your finger.

Rob knew the Datil was the perfect pepper for his infused honey. His friends all thought it was “awesome.” And he agreed, "that’ll be awesome!" And being ones to never steer clear of a good pun he dubbed it Datil Bee Awesome Sweet Hot Honey. It's the finest quality honey, regionally grown peppers, and handcrafted in small batches – time to put a smile on your tongue.
